Fungus Amongus

It seems our mushroom man has gone AWOL. Every week we dutifully visit our fungus purveyor and he doles out wild and cultivated little funga-doos. From Shitakes to Morels, Trompettes de la mort to the soon-to-come Chanterelles, he’s always got our stomachs covered. His name is David and he’s got a familiar New York accent and attitude and every Sunday he and his tattooed apprentice dispense mushrooms and advice on how to prepare the earthy wonders. Unlike other the other farmers at the market who tend the fields and grow their wares, he is part of a network that starts with foragers out in the woods who in turn sell to David. It must be the heat that’s driven them away, but oh do I miss my mushroom men. The last time I saw them they were hocking Shitakes and suggested we simply roast them alongside with some leeks, and haricot verts.
